Cocomia Cookies

The original recipe was for the Basic Chocolate Chip Cookies from Better Homes and Gardens.  I changed it slightly (as well as halved it) because what I had were chocolate covered macadamias and desiccated coconut!


To be honest, I liked this version better than the regular chocolate chip cookies!

1-1/4 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup packed brown sugar
1/4 cup granulated sugar
1/2 cup unsalted butter, softened
1 large egg
1/2 teaspoon vanilla extract
1/3 cup desiccated coconut
1 box 7 oz. Hawaiian Host Milk Chocolate Alohamacs, coarsely chopped

Sift together flour, baking soda and salt; set aside.

Cream butter and sugars together.  Add the egg and vanilla.  Beat well.

Stir in flour mixture.  Fold in coconut and chopped chocolate-covered macadamias.

(Chill for about 20 minutes, if desired.)

Drop by rounded tablespoons onto paper-lined cookie sheets, 2 inches apart.

Bake for 12 to 15 minutes, until cookie edges are lightly browned.

Makes about 2 to 2-1/2 dozen cookies.

Mrs. Field's Chocolate-Glazed Shortbread

The little girl raided the bookshelf and found Mrs. Field's Cookie Book.  (BTW, thanks Auntie C!).  She marked the recipe with a post-it and then asked me every day for a week if we could make the cookies.  I replied (every day) that we could on a day when she had no classes in school.

Last weekend, we finally baked these...


I followed the recipe quite faithfully, except for a couple of changes... I used the seeds of 1 vanilla bean, and half the amount of vanilla extract.  And, instead of chilling and rolling out the dough, I placed it in a piping bag with a star tip and piped out rosettes and a heart...


The instructions said not to let the edges turn brown but as you can see, my cookies were a tad over-baked!

Nonetheless, the little girl was happy!  She took a bite and said:  "Mommy!  I love you cookies more and more!  They get more delicious every time!"

Food for the Gods Cookies

I made Date Walnut Rum Truffles and had some dates and walnuts left over.  It was not enough for a batch of Food for the Gods (bars), but it could be good enough for a small batch of cookies. 


I was pressed for time, so I simply adapted the recipe for the famous Original Toll House Chocolate Chip Cookies as the base for my "food for the gods" cookies.  But 5 dozen cookies is really too much for us so I halved the recipe.  To make the cookies Christmas-y, I added half a tablespoon of molasses and half a teaspoon of apple pie spice.  The chips were substituted with chopped dates.  I also pressed a walnut piece on top.  In the end, I felt the dough was a bit wet so I added 2 more tablespoons flour.

The resulting recipe:

1-1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon apple pie spice

1/2 cup butter, softened
3/8 cup sugar
3/8 cup brown sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 tablespoon molasses

1 cup chopped dates
1/2 cup chopped walnuts
more walnuts, as topping

Combine dry ingredients together; set aside.

Cream butter with sugars until light and fluffy.  Add the egg; mix well.  Mix in vanilla and molasses.  Stir in dry ingredients.  Fold in chopped dates and chopped walnuts.  Drop by tablespoons on paper-lined cookie sheets.  Bake at 350F about 10 to 12 minutes.  Makes about 30 cookies.

Ube Marbled Cookies

We all have our favorite flavors, be it ice cream, cake, or any other dessert.  While almost every one I know has chocolate for his favorite, mine is ube.  In fact, I always bought ube cake even without reason, except that I wanted one... that is, until I made my own.  And, those who have tasted my ube cake all say that it's the best.  And I like playing around with it.

Ube is purple yam.  While it is a starchy root vegetable, like potatoes, taro, sweet potatoes, it is NOT a potato, taro or sweet potato.  And, although it is a vegetable, we use it in sweets and desserts - ube jam or halaya, ube cake, ube bread, ube rice cakes, ice cream, candy, etc.

As for me, I'm trying it out on cookies!


To be honest, though, I didn't know how to make the cookies.  I knew that I did not want an all-ube cookie.  I thought perhaps an marbled ube cookie would be perfect.  The question was:  make 2 doughs to marble together?  But I thought that would dilute the ube flavor too much that there might not be enough "ube-ness" in the cookie.  Besides, I wanted a simple cookie.  Making 2 doughs seemed twice the work...

It was then that I saw an opened bottle of ube jam from the Good Shepherd Convent in the fridge.  It was more than half full and I thought:  why not use the ube jam to marble some basic drop cookies!?  And to accentuate the ube flavor in the basic cookie dough, I could use coconut extract instead of vanilla...

And the result was quite good!  Frankly I loved how the cookies looked with that lovely purple marbling.  They tasted wonderfully too!  As for the texture, the cookies were the soft type, which we prefer, too...

To make the cookies, I used a basic cookie recipe similar to this recipe but I halved the recipe and omitted the chocolate pieces and the nuts.  After mixing the dough I gently folded the ube jam (a little more than a cup) but only for a few turns, so that the ube jam would not fully incorporate into the dough.  Dropped the dough onto paper-lined cookie sheets and baked them as the recipe instructed.  I got about 36 pieces.  Yum!

More Cookies!

I've been experimenting with the basic drop cookie recipe that I (accidentally) personalized.  I wanted to find out if I could make it my permanent go-to recipe and just add other specifics to make other cookies.

The verdict?  Success!  I found that the recipe was so versatile I could make it easily into chocolate chip cookies (and other candy variants), green tea choco chip cookies and fruitcake cookies.

The chocolate chip cookies are easy enough, just add about a cup to a cup and a half of chips (bittersweet, dark, milk, mint, strawberry, butterscotch, or a wild combination of some or all!

For the green tea cookies, I added some matcha tea powder but realized soon enough that the resulting cookies had too mild a green tea taste.  But it was not bad, I figure I just have to add more matcha powder next time!


The fruitcake cookies was probably the best of the lot!  I added some spices (mostly cinnamon and nutmeg) and a cup of chopped mixed dried fruits (raisins, apricots, apples, pears, peaches) and about half a cup of glace orange, lemon and lime.  Hubby declared it delicious!


A friend suggested that adding a splash of rum or brandy to make the Christmas-y feel/taste of the cookies more pronounced... and I just might do that for my next batch!

In any case, I think this will be a permanent addition to my recipe collection...

Hmmm... what other flavors can I make?  Chocolate or cocoa?  Date-Walnut?  Coconut-Macadamia?  The possibilities are (nearly) endless...

Basic Drop Cookies, stuffed with Snickers Peanut Butter Squared

We have a lot of Snickers Peanut Butter Squared.  Why?  Because I love Snickers and I love peanut butter (I also like the dark chocolate variant).  In fact, while I am not much of a candy or chocolate fan, it is the one candy that I cannot say no to.  The problem is we have too much that I can't finish them all!!!  (Hubby is not a fan of peanut butter...)

Solution?  Convert them into something else...  cookies!!!

Next problem?  What recipe to use?  My requirements are simple... I want... 1. a soft and chewy cookie... 2. a really easy and fast recipe... 3. a cookie that's not too sweet since the candies are sweet enough...

Solution...

Basic Drop Cookies, stuffed with cut-up Peanut Butter Snickers -

TADA!


The cookies out of the oven and cooking on the rack -  (the smells from the kitchen were magical!!!)


The original recipe estimated a yield of 4 dozen.  Frankly, I don't know how all of that would be consumed (even assuming that I was giving half away!!!) so I used only half the recipe and added a little less than 2 cups of chopped up Peanut Butter Snickers!

Yummmmyyyy!  I was done in less than an hour and the cookies were soft and chewy!  The peanuts in the candy provided the crunch while the caramel and nougat in the candy bits provided just enough sweetness!  I got about 30 cookies from half the recipe.  I'm definitely making these cookies again, and trying out its many variations!

PS - I have just discovered that due to my poor Math skills, I made a mistake in halving the recipe... be that as it may, the outcome was surprisingly good!  Hubby brought the cookies to a get-together with friends and everyone wanted more!!!  Hehehe, I guess not all mistakes have "negative" impact.

Chocolate Chip Cookies

This time, the recipe is by David Lebovitz, which I found here.  The only variation I made was to lessen the chocolate chips to 1 cup and since I didn't have any nuts, I added some of B's peanut MM candies (I chopped them in half or so)


Then, I had some dark chocolate buttercream left over from some cupcakes so I decided to make cookie sandwiches!


To be honest, the cookies were good, but I still prefer my favorite...  The cookie sandwiches, however, were really yummy!

Peanut Butter Brittle Cookies

Because peanut butter cookies are my absolute favorite cookies, I make them every so often.  Once in a while though, I make little changes... mainly I add "little" things such as chocolate chips, M&M candies, chopped nuts...

This particular time, I added about 1/2 cup peanut brittle chips (I used the back of a large serving spoon to whack peanut brittle into little pieces).


Yummy, yummy, yummy!!!

Flourless Peanut Butter Choco Chip Cookies

These are the easiest cookies ever!  I got the recipe from a fellow peanut butter fan after I tasted her cookies.  The recipe is so easy I didn't even have to write it down!!!


1 cup peanut butter (I like super crunchy)
1 cup sugar (I used brown sugar)
1 egg
1 teaspoon vanilla
1 cup chocolate chips (I only used 1/2 cup)

Just mix everything together.  Use a small cookie scoop to drop the batter onto paper-lined cookie sheets.  Flatten slightly using your fingers.  Bake in a preheated 350*F oven for about 10 to 12 minutes, rotating the cookie sheets midway.  Makes about 2 dozen small cookies or 1 to 1 1/2 dozens medium sized cookies.

The Beginning - Peanut Butter Cookies

I started baking at the age of 10 and cooking at 12.  My first baking project?  Peanut Butter Cookies from The Better Homes and Gardens Homemade Cookies Cookbook (1975).  The recipe is on their website.

The ones I baked some time ago...


I used crunchy peanut butter and added a pinch of salt.

These cookies are still in my most favorite list.
